Easy to bake, deliciously spicy and festive sultana scones

Easy Festive Sultana Scones by Sue Cartwright, Spiral Leaf

My deliciously sweet and spicy sultana scones are baked without eggs or milk and are just as good with wholesome self raising flour, a cup of softened organic unsalted butter, soft brown sugar, spices and coconut milk. Baked to perfection with a crispy crust and soft centre, served with organic butter or clotted cream and homemade jam.


Wholesome Ingredients

3 x cups Wessex Mill Self-Raising Flour (or equivalent)

1 x tbs Cinnamon

1 x tbs Nutmeg

1 x cup Soft Brown Sugar (flavoured with Vanilla Sticks in storage)

1 x cup softened Organic Unsalted Butter (not melted)

1 x cup Coconut Milk

2 x cups Organic Sultanas (and/or other fruit such as CItrus Peel, Mixed Fruit, Glace Cherries)


How to Prepare


1 x large mixing bowl

1 x set of measuring spoons

1 x bread board or pastry board

1 x rolling pin

1 x pastry cutter

1 x medium baking tray (plus small one for extra scone mixture)

1 x mixing knife


How to Mix & Bake


1) Turn on the oven at 350–375 °F (180–190 °C).

2) Add dry ingredients to a large mixing bowl.

3) Lightly mix with the knife.

4) Stir in the sultanas.

5) Quickly mix in the softened butter with fingertips until mixture is crumbly.

6) Stir in the coconut milk until the mixture is fully combined and a bit sticky.

7) Sprinkle liberally with extra flour and quickly bring together in a large soft ball.

8) Lightly sprinkle flour on your board and place scone mixture on it. Craft it into a circle ready to roll out.

9) Roll very lightly until the mixture is between 1.5 - 2.0 inches thick.

10) Cut out small or larger circles and make a bigger circles crossed with a knife to use up extra dough.

11) Place on baking trays and place in the hot oven. Close the door and bake for about 20 minutes.

12) Take out of the oven with oven gloves. Turn a scone over and tap the back. If it sounds hollow it is cooked.

13) Remove all scones from the oven, arrange of a wire cooling tray and sprinkle with brown sugar.

14) When cool, serve with butter or clotted cream and homemade jam.

15) Or pack into a festive box to give to family and friends over the Yuletide season.
